Catching up w. my old mate Evan who I’ve not seen for 8yrs! #6, a killer Sherry, dry Oloroso & PX, over 30yrs old. Perfect w. Nigella’s olive oil chocolate mousse. Med brown. Pronounced aroma intensity. Raisin, sultana, cocoa, caramel & cinnamon. Toffee, fruitcake, toffee apple & salted caramel. Fully developed. Sweet. Tasted at the winery this cream sherry has flavours of raisin fig walnut tobacco. It has a slight bitter edge which adds to the balance and the joy is that the flavours persist; for a very long time.
Perfect finish to dinner at CUT. Medium Sweet. Great balance. Acidity nicely tuned. Pronounced intensity and full body as expected. Caramel. Fig. Dates. Raisins. Long long finish. Need to explore Oloroso more. Love this sweeter style with PX🍇.
Paco Tapas 6/7: After the meal and the pairings, we decided to continue the evening with a couple of their 30 year old sherries. This sweet oloroso was first up, and the wine of the night for me. Scents of toffee, crème caramel, fig, raisin, honey. Complex palate of dried and stewed fruit, caramel, chocolate and walnut, but with a saline acid hit at the end that balances it all out wonderfully.
The old category of "dulce" is no longer legal in the AOC, the style closest to it now is cream sherry. 30 years old liquid gold, 75% Palomino and 25% PX. The sole range dates from 1847. Smoked toffee, honey, figs, coffee and milk chocolate. Gentle sweetness compared to a PX and has a balancing bitter salinity to it. Pure indulgence with a great lingering finish. 4.4

Christmas cake candied dried fruit, prune and a brightness of raisin. The finish is more dry with caramel and coffee on the nose. Damn delicious.

Confraria do Diego. Acredito ser o melhor Jerez que eu já tenha provado. Cor negra, profunda e turva. Algum resíduo. Aromas etéreos, farmacêuticos e algo mesclado com doce de caramelo, mel, chocolate e esparadrapo. Volumoso, amplo e de ótima acidez. Gorgeous, well aged Oloroso. Greatly balanced sweetness by age and oxidation. Works great on its own. Fig with raisins comes with nutty and strong honey and honey wax. Chocolate finish.

Rich, rounded and full-bodied. Sweet, but still full-flavoured, with a warmth that spreads throughout the whole chest, even while the sherry is still in your mouth, and keeps spreading as it goes down.

I cleared out Tesco’s a few years back after they sold these for £3.75 Since then I’ve been giving them to my Dad. He’s visiting in a couple of days so I thought I’d make this one disappear! Burnt toffee, dates and raisins; with an acid twist.
Blind tasting, how much it made me crazy this wine! I've never tasted this category before! Lots of oxidative notes, caramel, chocolate, walnut, hazelnut, but raisins, sultanas and a kind of dried peach aroma. Very sweet, but a fresh sensation and a very long layered finish, with lots of fruit.

A killer Sherry, one of bests I tried ever: the longer you sniff it the richer it gets, really - dried black smoked and backed fig dominating nose, on a palate fig again, coffee comes up, and then this wet baguette with iodine sugar drops on it. Aftertaste figs again. Figs all over, heaven, no less. 4,7 here
A rare and interesting wine, Palo Cortado starts out life as an Amontillado or Fino, aging under a layer of protective flor, before going on to age without the flor like an Oloroso. Apostoles continues this secondary aging up to a total of 30 years, including some time in ex-Pedro Ximenez casks, to produce a rich and concentrated sherry. Intense, nutty aroma and bone dry, walnut flavour. Fine-textured, with lovely fruit and great elegance.
Dark caramel colour, 2016 bottling. Initially confronted with the classic, sweet prune aspect of PX on the nose. In the mouth sweet with the nuttiness of the oloroso coming through. Plenty of dark caramel and coffee notes.
Seems like Cream Sherry has the potential to become a true favorite! What an absolutely delightful wine. A nose lush with almonds, caramel, chocolate and vague hints of delicious coffee beans. The palate gets an addition of dates, Coke and a great acidity that boosts this sweet drink to a magnificent complexity. Wiie :)

Notes of caramel, burnt toast, raisin w spices, salted prune, espresso & coffee beans. It maintains a sour note background while delivering all those sweet/aging notes.
Dark treacle brown colour. Raisin, prune, coffee, salted caramel, dried red fruit on the nose. A little pot pourri too. Lush and intense with caramel and fig but not overly sweet. Stunningly complex. After the initial sweetness, some intense bitterness comes in with roasted barley, burnt nuts, oak, cocoa, cardamom and prune. Burnt toffee. Long, oxidative, salt finish with puckering acidity. A wild ride.
2 in 1 — interesting combination of sweet pedro ximénez and dry palomino. Both kinds are clearly noticeable. Brown-red color. Nose full of herbs, spices, dried fruits. High body. Hot. Prunes, pepper, raisins, bitter chocolate, mocha on palate. Herbs on aftertaste.
I absolutely love the 30yo range and this didn’t disappoint. Prune, raisins, sweet baking spices, pretty much like smelling a Christmas cake but with a touch of furniture polish thrown in too. Prune, figs and treacle on the palate but still with some freshness. Absolutely delicious.
Enlightening masterclass "what Sherry gives to whiskey" pair number 2. Quite swee oloroso with a. Ice elegant oxydation. Not my taste, but beautiful chocolate and toffee scent and taste, honey, dried fruits with a lit of pruns. You can find exactly the dame characteristics and color family in the dalmore 18, double aged in the exact same cask!
Mind-blowing sherry with incredible depth and complexity. Just about every yummy flavor you can think of: toffee, raisins, fig, coffee, vanilla, oak, toast, brown butter, chocolate, wow! Sip slowly, savor, repeat. Fabulous with pungent cheese or nuts or sweets. 95 points.
VORS Tasting at bodega González Byass ( @fernando_gonzalezbyass @tiopepewines ) in Jerez de la Frontera. Had been nice to refresh knowledge about the Palomino and Pedro Ximenez grapes, the Solera System and make a stroll through the bodega. Great tasting of VORS (Very Old and Rare Sherry) with a minimum of 30 years aging. 4.3/5.0 Palomino fino 75% PX 25% First 15 years in a separate solera system, then grape varieties blend and next 15 years in other Solera! Very complex great aromas with raisins, nuts, figs, wood, light tannins, coffee, toffee. Sweet, medium + acidity, high alcohol (20%), full-body, great structure. Riktigt härlig! Oroloso med en skvätt av Pedro Ximenes. Rätt mörk i färgen och har sina söta toner. Men lite mer balanserad än en vanlig PX. Lite mer syra, lite kryddigare.

Beautiful mahogany colour and deservatedly so. Pure raisin and cooked plum with some spiciness and mellow oak.
Tastes of cherry and oak. The wood flavors dampen the sweetness and make this a very nice experience.

Frankly sweet, sturdy and in no way cloying, essence of stewed figs and plum in a very sweet sauce. Thick but with something that keeps it fresh.

Decent oloroso VORS (with 30% PX) from the big gun Tio Pepe. Nose of Burnt sugar. Hints of sweet cherry. Becoming drier over time. Predominantly burnt sugar that lingers. Caramel and toffee also came to mind.

Date and molasses aromas. Drinks vicious like runny date syrup. Savoury notes along with the sweetness. Lovely drink to have after a rioja riserva leading to the end of the meal. Slightly reminiscent of a herbal tincture popular in HK.
Produced in very small quantities, Matusalem is made by enrichment of a dry Oloroso sherry with 25% Pedro Ximenez, followed by additional ageing in its own solera. Rich and opulent but with well moderated sweetness. Really complex, both nose and palate are awash with notes of raisins, fig, candied fruits, orange peel and pudding spices. Easier to drink than a Palo Cortado, what a sherry! I love this.
VORS Cream sherry from 80% Oloroso and 20% PX. Nose: quite a bit more powerful and unique than any other cream Sherry I've had before. Notably cola and walnut, along with tobacco, menthol, chocolate, prune, cedar, and dried blueberries. Palate: medium+ sweetness with a full bod and medium acid. It's quite smooth and a large depth of flavor and a long finish.

Sweet Sunday! This is VORS; 30 yr old Sherry, blend of 75/25 Oloroso (Palomino)/PX. 130g sugar/liter. This is also a beautiful wine; very complex nose with figs, salted caramel, elderflower, salted prune, hazelnut and lot more. This is delicious. Good acidity and interesting sweet/salt balance.
