Roger Pouillon & Fils Solera Brut Champagne Premier Cru

The Pouillon's Solera is a deeply complex, funky Champagne. 25% Chardonnay, 25% PN plus a 50% of vin de réserve from '97 to '07. Hard to think it as an aperitive-ish one, it's maybe more enjoyable if drunk alone, as a fortified wine. Fat, rich and faceted, it plays, both in nose and in mouth, on oxy tones, while maintaining balance and acidity. Extremely long persistence and amateur-ish scents of soy sauce, cocoa powder, lime peel and almond paste.
