A very dry Amontillado on which oxidative ageing has had less effect than usual. Un amontillado muy fino o un fino amontillado. I love this wine!
Es mi amontillado de cabecera. Los hay mejores pero mucho más caros, y si bajas de precio también suele bajar la calidad. Así que me parece un vino muy rico con una buena RCP

Dry with both flor and oxidized aging notes. Good middle ground for the indecisive. Honestly, I’m more of a flor (fino) fan and this walks the line between both perfectly for me the dry (seco) side of this is also ideal for me. I hope you sherry fans like this wine. Medium amber color. Dried apricot, red apple, oxidized green apple, mushroom, and walnut nose. Dry. Medium acidity. Walnut, crushed dried flowers, dried apricot, oxidized green apple, and dried pear. Blind. Such a unique style.

Paco Tapas 3/7: As the sherries progressed, they became gradually nuttier. This one had more of a copper colour to it, along with the scent of salted caramel, sesame, and hazelnut. Full of good nutty flavours, a bit more sweetness than the previous too, with a touch of honey and anise.
Nice. Halavah, dusty yellow leaves 🍁, almond, roasted sunflower seeds with oaky notes. Warm and long lasting. Perfect in winter.

Gentle gingerbread, long nose. Balanced, elegant, mid pronounced nose. Florish, harmonious, long, nuts. Big wine but I am not able to understand it. 3,8
I love Amontillado and this was not an exception. This Amontillado has slightly pale color and less flavor, yet nutty aroma went well with roasted almonds used in sauté of spinach.
In nose, wood, olive oil, olives, yeast and yoghurt. High acidity, light bodied. In mouth, same notes as in the nose with more pronounced notes or wood and olives. Great amontillado.
Another complex Sherry, this time an Amontillado. beautiful lustre in the amber colour. The complex and developed nose shows both fresh citrus and lime tones, as well s ripen yellow apples and quince, roasted corn, minerality, dried tobacco leaves, wax, bitter almonds and some petroleum whiffs. On the palate it is dry and fresh with medium body and same complex aromas a on the nose. The complexity of the aromas is kept in the long finish as well. It felt balanced and elegant and very enjoyable.
3.9/5 Pours a bit darker ( Than the Fino) blonde. Smell is dry, touch more mineral, less ( but stil) refined, full, oak. Taste is full, dry, intense, minor saltyness, fairly easy drinkability. Nice amontillado with a touch of booze.

High acidity, low tannins, full body. Pronounced on the palate. Flavours of yeast (flor), almond, walnut, toast, charred wood. Long finish. A very good wine. Good value for money. Drink now or keep for some years.
Amber colour. Immediate hit of caramel on the nose, some toasted nut, orange blossom and a lingering hint of acetaldehyde. Flor flavours less evident on the nose than the palate which also offered up vanilla, salted caramel and almond. 4 years under flor in the Tio Pepe solera, then 8 years in the Viña AB solera, where the flor dies off and enables oxidative ageing. We are getting nuttier…the GB Amontillado is produced by allowing the flor to naturally died out then oxidation starts, which is about 7 years, this is made with wine aged in the solera for a minimum of 12 years; golden yellow, almost amber in color, nose of toasted walnut, hazelnut, roasted corn cob, caramel, tobacco, oak and yeast, medium body with low acidity, tastes of dried apricot, dried fig, acetone, super ripe yellow plum, cooked salty egg yolk, mineral, oak, caramel & toast, absolutely
Medium amber. Medium plus intensity aroma of bruised apple, lemon peel, hay, chamomile, toasted almond, dough, caramel, cheese, slight acetone. Dry, medium acidity, medium alcohol, medium body and medium plus finish. Medium plus palate confirms the nose. Very good quality. Not suitable for ageing.
Flying visit to York and thanks to @[1|6143833|Hoogervaaner], had the opportunity to drink sherry in one of her recommended venues (Ambiente). This Amontillado by Gonzalez Byass is such a consistently good performer. It shows so much that is great about fortified wine. Lovely oxidative profile with hazelnut and walnut on show in spades. Backed by orange blossom, apple peel and green olive brine. Paired so well with tapas. Liked sufficiently that more was ordered 🍷
Classical Amontillado with oxidative nutty aromas in nose. Very dry in palate. Many layered with dry, flor, nutty and persistent flavors rounding in mouth. 10-12 Years maturation and the flor still indicates the character of Sherry.
Wine 2 of 6 of Ramekins & Wine’s Gonzalez Byass Sherry Tasting. This is aged for 12 years (underlining just what great value Sherry is). My overriding flavours were of walnut, black olive, toasted nuts and bruised apple skin as well as back notes of pickled onion and raw mushroom. Served with sautéed wild mushrooms, garlic butter, smoked almond and aged Parmesan.
Haha, this is turning into a tasting! Clear, pale, amber color. Clean, medium+ intensity aromas of caramel, hazelnut, acetone, lemon peel and spices. Dry, high acidity and medium+ body. Nuts and caramel. Medium+ finish. Very good.

Amontillado is a variety of sherry wine characterised by being darker than fino but lighter than oloroso. It is less sugary than sweeter sherries. Vino Ab, which sounds like Swedish government alcoholpoly, falls to this category. Dry as hills of Jerez during the summer, there is no extra sugar to get high. 16.5%. Despite dryness, it comes with sherry flavours like nuttiness and raisins. Beats more plain sherries 6-0.
Dry and nutty with a lot of strength. A sherry with its distinct yeasty character. I have little experience on Amontillado sherry, but now I have a reference. Based on critics scores and price, this wine represents great value.
This Amontillado is 12 years old and ages 4 years inder flor, then no new nutrients (fresh wine) is added, 4 years later the flor is gone and it oxidatively ages another 4 years. During this process, the wine increases in alcohol to 16.5% abv. The nose is incredibly fresh and Fino-like whereas the palate has a nutty character.
Wine #2, Ramekins & Wine with Gonzales Byas, paired with sautéed wood mushrooms, garlic butter, smoked almond & old parmesan. On its own, there's baked apple, a hint of onion, hazelnut shells, charred wood & a touch of oxy. Matching with the food really accentuates the nutty, umami notes in both the wine & food.
⭐️ 90P/4.0* Very well-balanced Amontillado. Great structure, complexity without getting too complicated. Good one if you want to learn or understand this style. 👁 Med amber. 👃 Nose with dried fruits (dates, figs) and tobacco, roasted nuts, bitter orange and lemon zest, toffee and a hint of coffee. Med intense. 👅 Dry, fine wine wit a med acidity and a med- body. Alc is med (for fortiefied) and the med+ finish dominated by the known tertiary notes.

Отличный правильный сухой херес. Орехи, дуб и ноты опавшей листвы. Финиш долгий и приятный. Пьется понемногу, но долго не надоедает.
Um Amontillado com um nariz bem doce, mas uma boca que dá um estalo de secura e tem uma acidez que ataca as parótidas. Incrível!

Muy intenso en nariz, bastante más fresco en boca, pero con mucho cuerpo. Algo de frutos secos y de whisky. Bastante picante y especiado
Nariz muy parecida a la del Tío Pepe, pero más suave y fina, con notas de almendras fritas. Untuoso, pero ligero y fresco. Muy fácil de beber.

Maridaje que no falla. Jamón ibérico, aceitunas verdes y jerez. En este caso un rico amontillado de color ambarino. Aromas de almendras y carozo de durazno. Avellanas y cascara de naranja. En boca es sedoso de toque salino y sabores de uvas pasas, caramelo, damascos desecados manzanas rojas oxidadas y nueces. Excelente por su precio. 4⭐️
Cuando entra en mundo de los vinos del marcó de Jeréz queda totalmente atrapado. Hasta la fecha no era de vinos generosos pero cada día me apasionan más, será la edad??? Color amielado, denso, limpio y brillante. Nariz de intensidad media alta, elegante, notas de frutos secos, avellanas, nueces tostadas. Toque a salmuera y a caramelo quemado. En boca es seco, salino, amplio y con un largo postgusto. Retronasal, avellanas, notas ahumadas y miel.

Deep and leathery nose with a dry and refined palate following. Enjoyed with fried Jerusalem artichokes; wonderful pairing. Sherry showing once again how underrated it is. Please people, drink more Sherry!

Почему-то в линейке хересов считается один из самых легких. По мне так хорошая "смола", местами как будто йод - запах моря-океана. В целом прекрасно, но мой херес все чуть крепче, подальше от вина...
넛트 산화 호두 캐러멜 코에서 열감이 느껴짐 거의 풀바디이나 바디가 금방 사라짐 산도가 쎈거같으나 알콜인지 구분 안됨 알콜은 확연히 두드러지고 피니시가 김 산도 지나치고 알콜여운과 넛트류의 기름진 고소한 내음이 살짝살짝 바톤터치하듯 느껴짐

An amontillado usually starts as a fino sherry, in which the 'flor' yeast film stops developing or the winemaker decides to kill the flor. It is then allowed to oxidise slowly in barrels, during which it gets a darker colour and an additional set of aroma and flavour components. Light brown wine with viscous tears. Medium intense nose with almonds. Dry, balanced acidity, light body, nutty, short finale.
Honey nut and fig on the nose, light bodied but chewy, fresh finish.
Toasted almond, mushrooms and rosemary. Salt. Quite fresh, with very pleasant and long salted walnut finish. Had it with tiramisu, and made an excellent pairing.
